Vegan Meatloaf


  • 1 medium onion, diced
  • 1 tablespoon garlic, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 package Yves Original Veggie Ground Round
  • 1 1/4 cup whole wheat bread crumbs, lightly toasted
  • 1/4 cup oatmeal cooked with 1/2 cup boiling water
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 2 tablespoons ketchup
  • 2 tablespoons soy sauce
  • 1 tablespoon mustard
  • Salt and pepper to taste


Preheat oven to 350˚F.

Saute vegetables in a frying pan until soft.

Combine Yves meat, sauces and spices in a medium bowl. Add prepared oatmeal and veggies.

In a separate frying pan, toast breadcrumbs until golden brown and add to meat mixture. Knead with hands until well combined.

Lightly coat a loaf pan with oil. Firmly press mixture into pan and cover with tinfoil. Bake for 40 minutes.

Remove tinfoil from pan and cover meatloaf with a thin layer of ketchup. Place back in oven for 30 minutes.

Serve hot!
